Farewell, Friend Bucky!


We said Good Bye to Bucky with a little party eating a very popular Mexican snack:

Chicharrones Preparados


Chicharrón preparado, or prepared chicharrónes, are made with the large rectangular fried chicharrón de harina, which is then topped with chopped cabbage, diced tomatoes, sour cream, cotija cheese, sliced avocados, cueritos (pickled pork rind slices), and hot sauce, usually Salsa Valentina or BotaneraAnyway, you can add only some of the ingredients.

After this party, we had another little reunion to say Good Bye. This time we ate 

Elotes Preparados


Elote or corn on the cob is another Mexican popular snack. It could be roasted or steamed and you have it on a stick (if you have it freshly cut and in a cup those are named “Esquites”). Toppings vary but the main components are salt, lime, mayonnaise, crumbled cheese like cotija or parmesan, and hot sauce/chile. You can also prepare your corn only with a mixture made of lemon juice and powder chile.
